The best damned chocolate chunk peanut butter banana bread you will ever have!
(8x8 pan)
1 cup flour
¾ cup light brown sugar
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
3 med very ripe bananas
1/3 cup peanut butter (I use creamy)
1 T Nutella (optional)
4 oz cream cheese – softened
1 large egg
2 ½ T oil (canola, vegetable, whatever)
Generous pinch ground flax seeds (optional)
¾ cup semi sweet chocolate chunks
Preheat oven to 350. Coat pan with cooking spray. Mash bananas – I use potato masher
Combine flour, sugar, baking powder, baking soda, and salt in a large bowl.
Whisk together mashed bananas, peanut butter, Nutella, cream cheese, egg, oil, and flax
Stir banana mixture into flour mixture until combined. Fold in choc chunks.
Scrape mixture into pan & bake approximately 35 minutes. When toothpick inserted in center comes out holding on to a few crumbs, it’s done. Cool on wire rack at least 15 min before removing from pan. Cool completely before slicing or wrapping.
** Notes **
The riper or darker the bananas, the better.
You can add chopped nuts or use crunchy peanut butter for different texture.
Baking time is approximate. I start checking at 33 min, but in my oven, it takes anywhere from 35-40 min.
Do not over bake or it will get really dry…even a little over baking makes it dry.
I had a few white flecks in my bread because the cream cheese didn’t mix in all the way. These added really good flavor.
